From warm, balmy, summery beach days, just like that, the weather has turned- and a cold front has hit. Luckily for us Durbanites it’s more like a chilly front but even then, warm hearty meals seem to call as replacements for summers light meals.
This salad with a difference is gorgeous in colours, textures and most of all flavours. The rosemary and maple add amazing flavour explosions and lend themselves perfectly to the rest of the ingredients. It pairs well with chicken or meat dishes and works well at braai time as a side. Warm Butternut & Sweet Potato Salad
1 packet cubed butternut
3 sweet potatoes sliced
1 red onion
Toss the above with 1 tbls olive oil, 1 tbls maple syrup, salt and freshly cracked black pepper along with 2 sprigs of rosemary. Bake at 180 degs C for around 40 minutes or till done.
2 tbls olive oil
1 tbls maple syrup
1 tbls orange or lime juice
Salt and cracked pepper to taste
1-2 tbls balsamic vinegar
1/2 tsp Dijon mustard
Once the veggies are done, remove from the oven and toss with the dressing. Top with feta, olives, roasted sunflower seeds, toasted walnuts and goji berries. Serve warm with a bed of lettuce around it.
*Can also add Beetroot to the veggies.
