Vegetarian Lasagne

So this week has been chillier than usual here in Durban [ which usually is warm and summery even during mid winter! ] The blanket and book weather called for a hearty, warming meal. What better than a lasagne. Since I was making a chicken dish as a main, I settled on a vegetable lasagne as a side [ goes well as a main as well ]

All you need to make this dish is:

~ White sauce, set aside for later
~ Lasagne sheets, check the box for instructions on whether it needs to be pre boiled.

~ Corn spears
~ Mushrooms
~ Butternut
~ Carrots
~ Baby marrows

Veges

Chop the vegetables into small pieces.

Heat some oil in a pot or wok, and braise an onion.

Onions braising

Then add in:

Salt to taste
1/2 tsp of fine black pepper
1 tsp sugar
1 tsp garlic
1/2 tsp nutmeg powder
1 tsp dried parsley
1 tsp paprika powder
1/2 tsp aromat

Braise lightly, then add in the veg. Braise till cooked.

In a corningware dish, place a small amount of white sauce, the top with lasagne sheets. Spread on some veges. Repeat layers ending with the sauce.

Lasagne

Bake at 180 degrees celcius for an hour, remove from the oven, top with cheese, place in the oven again till the cheese melts. Remove from the oven and set aside for 5 minutes before serving.
