Recently, upon finding a tub of mascarpone cheese sitting in my fridge begging to be used, I found myself throwing together a tiramisu idea which had been on my mind for sometime. I’m not one to follow recipes, and find it more fun using recipes to get an idea of what I might want to do, and more often than not, I tend to look at a single ingredient, imagine what I want out of it, and then build up a recipe based on that. So, that was what happened that evening, I saw the mascarpone and decided I wanted to make up a recipe for ‘Frozen Tiramisu’ which I wanted to be able to freeze, unmould and serve sliced.
So, without further ado, here’s what I did
1 packet lady fingers
2 tbls good quality instant coffee powder dissolved in 1/4 cup of boiling water
Some chocolate grated and set aside
1 x 250g tub of mascarpone
2 – 3 tbls icing sugar
~ Beat the mascarpone with the icing sugar and set aside.
~ Dip the ladyfingers in the coffee.
~ Set a layer of ladyfingers in a loaf tin, which has been lined with cling film.
~ Top with a layer of the sweetened mascarpone.
~ top with a good dusting of grated chocolate.
~ repeat layers.
~ Freeze for a few hours.
~ When ready to serve, turn over onto a serving plate.
~ Top with whipped cream and a good dusting of cocoa powder.
Slice, serve and Enjoy <3
