Nandos Inspired Grilled Chicken.

With summer officially upon us, and the heat and humidity beginning to envelope our days and nights, menus begin changing to foods that are lighter, salads become a staple at every meal, and cooling refreshing drinks are sipped on.

So, for last nights supper I used a recipe which my brother invented, yes you heard that right! My brother! A yummy easy chicken recipe which doesn’t require much prep time.

Since we’ve begun trying to make a lifestyle change with regard to our eating habits, we’ve been avoiding too many carbs and since air fried chips were served as a side, we gave the roti a miss. Sliced cucumber and avocado were also served as a side along with Haloumi. And to drink, my favorite at the moment has been infused water. Every 2 days I make up a new jug featuring different fruits. Last night was mint & watermelon. Refreshing and yummy! And healthy to boot!

Muhsins Nando Inspired Grilled Chicken

1 chicken disjointed

1 tbls aromat spice
1 tbls peri peri powder
1 tsp crushed garlic
1 tbls lemon juice
Nando’s sauce of your choice

Make a paste with the aromat, peri peri, garlic and lemon juice.
Smear onto chicken and leave for 10 minutes.
Place the chicken into a Pyrex and dot with butter.
Place under a grill for 15 minutes, remove and turn the chicken over.
Grill for another 15 minutes.
Remove from grill and pour over a generous amount of your favorite Nando’s sauce. Place back under the grill for about 5 minutes.

Serve with chips and salad.

For the Haloumi: slice and grill on a very hot pan using no oil.
For the infused water: add watermelon slices to a jug along with mint leaves. Top with water and refrigerate for an hour or two before consuming.
