Sumac & Yoghurt Brinjal Salad

Sumac & Yoghurt Brinjal

1brinjal, sliced & soaked

1 tsp crushed garlic

1 tsp sumac powder

A good glug of olive oil

1 tsp fine red chilli powder

1 tsp coarse red chilli powder.

Toss the brinjal with the above.

Grill till crisp.

Then top with:

1 cup Yoghurt

1/4 tsp crushed garlic

Handful finely chopped mint

1/2 tsp crushed jeeru

Salt and pepper to taste

1 tsp crushed red chilli powder

To serve:

Plate the brinjal

Top with yoghurt dressing.

Crumble some feta.

Scatter on some pomegranate rubies.

Throw on a little more chopped mint.

Pairs well with jalapeƱo hummus from the Mediterranean company and some toasted pita wedges which are basted with garlic butter.

Simple sides for a braai or good as a meal.
