My eldest daughter has recently been liss for chicken filled bread buns. For some reason or the other I just could not get down to making it. Today I finally made the time to make up the dough seeing that I had enough chicken filling to fill a batch.
A lovely go to recipe is the popular ‘magic dough’ recipe, there are various variations on the amounts for the recipe but essentially it boils down to the same thing. If you have a machine in which you can knead the dough, it takes literally 10 minutes to mix and knead.
I popped all the ingredients into my kitchen aid, set the speed on low to combine, then increased it to the max to knead for 5 minutes. Once filled, the buns are beautifully soft and so yummy I’m afraid it’s going to be eaten in a day! The recipe yields about 4 dozen filled buns and can be used for pizzas, calzones or plain buns or rolls.
Into a bowl / dish add in:
5 cups flour
1 tsp salt
In a separate bowl add in :
1 cup boiling water
1/3 cup oil
1 cup milk
1 tsp sugar
Preheat oven to 200 degrees.
Once the liquid is tepid, add in a 10g satchet of instant yeast and leave to stand 5 mins in a warm place ( a trick I learnt from my beloved mum )
Add the liquid to your dry ingredients and mix to combine, then knead well.
Cover and leave to rise in a warm area.
Once risen, knead again.
Break of small golf ball sized balls of dough, flatten slightly in your palm.
Fill with about 1/2 – 1 tsp of any filling of your choice ( slightly saucy )
Place the filled balls onto a baking tray.
Brush with a beaten egg.
Sprinkle with sesame or poppy seeds.
Bake for 10-12 minutes.
