Scrambled Eggs and Avocado.

Scrambled eggs on toast

 

Being a person who is not really one for breakfast, and who’s breakfast usually consists of just a cappuccino and mayyybe a toast, this scrambled egg on toast along with avocado is usually because I’m nice and hungry and craving a quick hearty meal.

Simple to make, flavorful, filling and healthy, it’s just plus, plus, plus all the way!

All you need is:

1 egg cracked into a bowl

Add in the following:

Salt to taste
Pepper to taste
Any seasonings you enjoy: for me it’s dhana jeeru ( cumin and coriander powder) , a little turmeric and some red chilli powder ( the taste and flavor from fresh green chillies and powdered chillies are worlds apart! )

Using a fork or whisk, lightly beat.

In a small frying pan, chop up some tomato, add in some chopped chilli ( I lurve the flavor of a chilli ) throw in some onion and then add in some butter. On a low heat, cook till the ingredients are slightly cooked. Add in the seasoned egg and cook till done.

Place onto a toasted bread or baguette. Slice up some avocado and serve on the side.
