One Pot Creamy Chicken Pasta

This pasta is simple and quick to prepare and I made it using a single pot as I was pressed for time. The result was a creamy, flavour filled casserole which took me back to my childhood when mum would prepare our favorite white sauce and chicken pastas for lunch or supper. As kids, it was a meal we loved. Making up this pasta is always fun as I use ingredients on hand and don’t work from a specific recipe. There are many ways to change the flavors for different meal sensations- through adding mushrooms or bell peppers, substituting steak for the chicken or even adding veges. Go on use this recipe and make it your own 🙂

One Pot Pasta

Pasta

Bring water to boil in a large pot.
Once it is at a rolling boil, add in about 3 cups of macaroni or screws.
Cook till Al dente, drain and set aside in a Pyrex dish.

Chicken

Cube 3-4 chicken fillets.

To the pasta pot, add a good glug of olive oil along with the chicken

Add the following:
Salt to taste
A dash of ground green chilli
A tsp of chicken spice
1/2 tsp ground jeeru (coriander powder)
1/2 tsp fine pepper powder
1/4tsp ground ginger
1/4 tsp ground garlic

Cook on a medium heat till the chicken is cooked. Place into the Pyrex with the pasta.

White Sauce

In the same pot as you cooked the pasta add the following:

2 tbls flour along with 2 tbls ghee or coconut oil
1/2 tsp salt
1/4 tsp fine pepper powder
1/2 tsp aromat (optional)
1/2 tsp dried mixed herbs or origanum
1/4 tsp crushed garlic

Allow the ghee to melt and the flour to begin bubbling. Then add in about 2 cups of milk and stir till it begins to thicken and then boil. Once it begins boiling remove from heat and pour over the pasta. Combine all with a large spoon. To reheat, bake for 35-40 minutes in a preheated oven at 180 degrees C.
