Nando’s strips and rice is a meal loved by many and in my home it’s no different.
Tonight I needed something quick and simple to whip up and this was the perfect meal for that.
Rustling up this meal is simple:
For my rice, I boiled a cup and half of Tastic rice with a tsp of salt and a tsp of Robertsons Spice for Rice along with a pinch of turmeric. Once cooked, drain and set aside. Steam before serving.
Saucy Chicken Strips
1/2 kg chicken fillet washed and sliced into strips.
Marinate the strips in the following:
Salt to taste
1/2 tsp fine red chilli powder
1/2 tsp crushed jeeru
1/2 tsp crushed red chillis
1 tsp crushed garlic
1 tsp ginger garlic masala
1 tsp Mochachos spice ( or any chicken spice)
1 tbls fried onions
1 tbls lemon juice
In a pot, heat up a good splash of olive oil, throw in your strips and stir fry. Lower heat and add a half sachet of tomato paste. Cook till done. Before serving add a generous ( very generous! ) glug of your favorite Nando’s sauce and a 1/4 cup of cream. Simmer for 3 minutes before serving with the rice.
Rice can be boiled and then steamed with a 1/4 tsp extra spice for rice, 1/4 tsp crushed garlic, a dash of green chilli as well as some flash fried onion and bell pepper slices for a slightly more spicy version.
