So I’ve been a bit quiet recently, not for lack of cooking, but rather because I’ve just been feeling down with the whole situation that’s been going on in Palestine. May Allah make it easy on them. So Eid preps this year have sort of taken a seat on the back burner and well, now that there’s just a day or 2 left, I’ve decided to make a few treats for the kids that will be at my home, as we will be hosting Eid once again this year. Normally my tables are bursting at the seams with baking and sweet stuff, this year I’m taking it easy ( more due to lack of excitement due to the ongoing crisis in Gaza, Syria and so many other places ) So I decided to go with a candy theme, and I’m making treats that will be enjoyed by both young and old. Unfortunately a visit to the dentist after Eid might just be needed 😉
My son and 2 of his cousins sat for the Sunnah I’tikaaf, so last night I received a ‘list’ of goodies which ‘must’ be featured on Eid day. Luckily for me, most of the goodies were yummies that have become almost standard Eid day fare here at home. More of that after Eid, when I will hopefully do a post with a gallery of pics.
Tonight though, I whipped up 2 treats which require every bodies favorite – marshmallows, and if that wasn’t enough, on featured Oreos, and the other lots and lots and lots of chocolate 🙂
Here you go, not one, but 2 yummy recipes as a small Eid gift from me to you 😉 enjoy.
Rocky Road chocolate:
2 slabs of chocolate melted.
About 6 marshmallows, chopped
6 Marie biscuits roughly broken
A few almonds chopped
On to a baking tray, place a sheet of baking paper.
Place all the ingredients except the almonds into a bowl.
Mix quickly then spread on to the baking paper.
Sprinkle the top with the almonds.
Place in the fridge to set.
Once set, cut or break into required sizes.
Keep refrigerated till ready to serve.
Oreo Rice Krispy Treats:
6 cups Rice Krispies
1 box Oreos- roughly chopped or broken
3 tbls butter
40 regular sizes marshmallows.
Grease a Pyrex dish or baking pan.
Throw the Rice Krispies and Oreos into a large bowl.
In a small pot, melt the butter and marshmallows over a low heat till fully melted and incorporated.
Once melted, work very quickly and throw the mallow mixture over the rice Krispy mixture.
Stir quickly till mixed.
Place into the greased dish and pat down.
Leave to cool completely.
I then drizzled on some whit chocolate and sprinkled on some finely crushed Oreos.
Cut into squares.
Store in an airtight container till ready to serve.
