Mango & Granadilla Sorbet

Summer, sweet sweet summer.. And ice cream !!!! And the beach !!!! Three of my all time favorites 🙂

Whipped up some mango sorbet the other day. Quick, easy yummy and oh so smooth.

Mango Sorbet

250 ml water
250 ml sugar
15 ml lime juice

Heat the above till the sugar dissolves. Cool.

In to a bowl, add 500ml of mango purée. Add in the sugar mixture and 2 cans of granadilla pulp. Stir well. Place mixture into an ice cream machine and churn, when the sorbet is almost firm- towards the last 5 minutes of churning, add in 2 egg whites which have been whipped stiff. Place into a freezer safe bowl and freeze for a minimum of 4 hours.
