Having had a crazy busy day today, with most of it spent out of the house, I needed a simple, quick but yummy and healthy meal to serve up for supper to my kiddos.
Earlier this morning I had taken a chicken out to defrost, and since my chickens are from Gardees Chickens in Durban, there’s barely any cleaning to do on the chicken. A quick de-vein and rinse and I was ready to marinate.
With limited time left before supper was due to be on the table, inspiration hit! A packet of Machachos spice purchased yesterday at Desais Butcher beckoned and the Actifry begged to be tested by cooking a meal in it.
I marinated my chicken for 15 minutes in:
~ 2 tablespoons of the spice
~ 2 tablespoons lemon juice
~ 1 tablespoon mayonnaise
~ 1 tbls olive oil
I then removed the centre rotating piece from the Actifry and placed the chicken into the pan, trying not to overlap pieces.
20 minutes later, presto! Chicken ‘grilled’ to perfection!
Easy peasy, yummy and healthy, I served it with chips sprinkled with the Machachos spice for chips.
The verdict: The kids loved it and have requested the leftovers for school lunch. I am pleased at having another quick and easy, yummy meal up my sleeve for the next time I’m caught running late 🙂
