Last night we had a braai, but as usual we ended up with extra packs of defrosted meat which could not be frozen again, and therein lay my plans for tonights dindins.. Tacos..!!
A taco is a traditional Mexican dish composed of a corn or wheat tortilla folded or rolled around a filling. Tacos can be made with a variety of fillings, including beef, chicken, seafood, vegetables and cheese, allowing for great versatility and variety. A taco is generally eaten without utensils and is often accompanied by garnishes such as salsa, avocado or guacamole, coriander, tomatoes, minced meat, onions and lettuce.
Simple, quick and yummy, I chose to use ready marinated meat for my filling, store bought tortillas for my home baked tacos and the sides are ingredients which are always on hand.
Marinated steak ( I used Desais Texan Steak which I sliced into strips before cooking )
1 pack of tortillas rotis
Jalapeño peppers – sliced
Preheat the oven to 180 deg C. Wrap the tortilla rotis into a slightly dampish towel. Place in the microwave for 30 seconds. Remove. Lightly spray each tortilla with spray and cook. Place each tortilla over the grills of the oven rack. Bake for 7 minutes. Remove and set aside.
Heat about 2 tbls of coconut oil in a wok or pan, add in the steak and stir fry till done, set aside.
Chop the tomato and onion and mix together. Set aside in a bowl.
Mash the avocado along with a little lemon juice, some crushed garlic and salt and pepper to taste in order to make guacamole. Set aside in a bowl.
Place all items on a serving plate. Each person then makes up their tacos according to their taste and preferences.
