With the fasting month upon us, and savouries usually being the main dish on our tables, this year we’ve opted to do just 2 savouries and a light main. This chicken dish was quick to marinate and just as quick to cook and with a welcome change to the usual spices.
Lemon & Herb Chicken
1/2 chicken cut in to pieces
1 full tsp crushed garlic
Salt to taste
A generous grinding of black pepper
Rind of 1 lemon
Juice of 1 lemon
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp green chilli or to taste
1 tsp honey
2 tbls olive oil
Mix all the above and marinate.
Peel and cut a potato in to quarters.
Place the chicken in an airfryer along with the potato, cook for 15 minutes, turn and cook again for a further 10/15 minutes.
Serve with lemon slices and chopped coriander.
PS This chicken can be grilled should you not have an airfryer.
