Grilled feta rounds topped on a salad is something easy to make and delicious to eat. Gently flavoured with olive oil, fresh thyme and some garlic, it is a perfect accompaniment to many dishes especially during the warmer months as we head into summer. It is also delicious as a meal on its own served with crust ciabatta bread.
Grilled Feta Salad
A few sprigs of fresh thyme
Olive oil for drizzling
Fresh ground pepper
A tsp or so of crushed garlic
Salad leaves- rocket pairs wonderfully
Baby Italian tomatoes
Olives of your choice
Place the feta rounds onto an oven proof dish.
Drizzle with olive oil and sprinkle salt to taste- I leave the salt out as feta has its own salt generally.
Top with fresh ground black pepper and some crushed garlic.
Using a herb scissor, chop and sprinkle on some fresh thyme.
Slice on some Italian tomatoes.
Place under a grill approximately 10 minutes or till the cheese is slightly golden.
Remove from the heat, place onto your salad leaves, top with olives and a good dash of lime juice ( lemon will work fine as well )
Serve and enjoy.
The cheese will not melt, it will be soft and tender to eat.
As it cools it hardens again but can be successfully reheated to soften.
Olives can be topped before grilling as well..
