Chicken Filled Bread Cups.

Today I struggled with thoughts of what to make for Iftar. Apart from the usual samoosas, pies and spring rolls, the kids and I enjoy having something different each night. I finally settled on bread cups, always easy to make as I keep chicken and steak fillings ready in my freezer, and also very yummy as its topped with mash and cheese- our favorites πŸ™‚

All you need is:

12 slices of bread- crusts removed
Chicken or steak filling of your choice
Some chutney or chilli sauce
2 potatoes peeled and mashed
Grated cheese.

Take a slice of bread, using a rolling pin, roll it so that its slightly flattened. Using a cutter, cut out circles to fit into a muffin tin.

Place bread into muffin tin. Top with some filling. Add a dash of chutney.
Season your mashed potato. I used salt, pepper, butter and some green herb spice which I purchase from Gorimas Spice Store ( the name escapes me right now ) mix well. Pipe on to the chicken.
Sprinkle on some grated cheese. Garnish with bell peppers and dried mixed herbs.
Heat in a preheated oven ( 180 degrees C ) for about 10 – 15 minutes.

PS : cutting the bread into circles wastes quite abit of bread, instead roll out the bread and cut into 4 squares and place into your tin. Works just as well and there’s no waste πŸ™‚
