This one pot mutton curry is quick, easy and delicious. It came about when I had yet another day of being short on time, while craving a hearty meal.

Cheats Curried Chops
Mix 1 kg chops with the following:
Salt to taste
2 tsp red chilli powder
2 tsp ginger garlic masala
Juice of 1/2 lemon
1 Cinnamon stick
1 Whole elatchi
2 tsp vinegar
4 Whole black peppers
1 tsp whole jeeru
2 tsp dhana jeeru powder
Separately chop and keep aside the following:
1 large onion- chopped or sliced in rings
1 large tomato- cubed
Heat 2 tbls of coconut oil in a pot, add the chops and place a layer of onion on top. Top the onions with the tomato.
Cook on high for 5 minutes then lower the heat. When half done, mix the chops and veges. Cook till chops are tender and the onion and tomato has melded into a curry with the the water that will emanate from the chops as they cook. 10 minutes before serving add in a satchet of tomato paste and let that cook in. Add fried / air fried potato quarters before serving along with fresh chopped mint. Serve with roti.
When cooking mutton or steak I always soak the meat in cold water and about 3 tbls of vinegar. This helps tenderize the meat as well as remove any ‘meaty’ smell that might have lingered.
