Kheer Or Indian Rice Pudding

Kheer is a well loved Indian dish which has a bit of a reputation in the South African Indian Muslim community for being served predominantly at funerals!!

Why you may ask.. Well to be honest, I haven’t a clue!! And, be rest assured, that when you mention that you’re making kheer, the playful question that you’ll receive is ‘ Why? Who died?!! ‘

It’s a dish loved by many, delicious hot with puri patha on the side, or served cold as a dessert, and every household has their variation on this favorite. Mine is the use of a vanilla pod and fresh cream and with the leftovers, I think it would make for an amazing ice cream if blended then churned..

 

Kheer

1/2 cup rice cleaned and soaked

1 litre milk

1/4 cup almond powder

1/2 a vanilla pod

2 tsp cardamom powder

3/4 tin of condensed milk or sugar to sweeten

1 cup fresh cream

Method:

Add the milk, rice to a pot.

Split the vanilla pod, scrape out the seeds and add it to the milk along with the pod.

Simmer on low till the rice is cooked till soft, being careful to stir every so often to avoid scalding.

Thereafter add the almond powder and cardamom powder.

Add in condensed milk or sugar to taste.

Throw in the fresh cream.

Allow to come to a gentle boil, remove the vanilla pod and serve sprinkled with sliced pista or almonds

Can be eaten hot as an accompaniment to puri patha or cold as a dessert.
