Chicken Quinoa Salad With An Orange Balsamic Dressing
Leftover chicken of your choice
1/3 cup quinoa rinsed, boiled and drained
1/2 an avocado chopped
Baby tomatoes sliced
Feta cheese- crumbled
Layer the above in a bowl. Drizzle with the dressing and enjoy.
Orange Balsamic Dressing:
Juice of 1/2 an orange
Freshly ground salt & pepper to taste
1/2 tsp dijon mustard
1 tbls Balsamic vinegar
1/2 tbls olive oil
Mix the above till smooth.
