Homemade Hummus

A smooth and delicious alternative to the store bought versions. I’m trying out the recipe using a recipe saver in the hopes that you guys can save the recipes posted with ease. Do let me know what you think.

 

Homemade Hummus
A smooth, delicious dip and accompaniment.

Ingredients
  1. 1 can chickpeas, drained
  2. 1/4 cup Tahini paste
  3. 1/4 cup fresh lemon juice
  4. 1 clove garlic, crushed
  5. 1 tsp salt
Instructions
  1. Put the drained chickpeas in to a dish.
  2. Top with water.
  3. Gently rub till the skins come off, remove the skins.
  4. Put into a pot with water to cover the chickpeas and bring to a boil.
  5. Leave to simmer for 5 mins.
  6. Drain but reserve half the water that it was cooked in.
  7. In a processor add the Tahini paste.
  8. Add the freshly squeezed lemon juice.
  9. Then add the garlic and salt.
  10. Whizz.
  11. Drain the chickpeas in to a bowl and set aside the water it was cooked in.
  12. Add the chickpeas to the processor.
  13. At this point it will be slightly dry so add a teaspoon of the water till you reach the desired consistency.
  14. Decant into a bowl.
  15. Make an indentation in the centre.
  16. Sprinkle with paprika.
  17. Top with olive oil.
  18. Serve with pita.
  19. Enjoy
Notes
  1. Can be used as a dip for veggies as well as in sandwiches, falafels and works well with lamb and chicken dishes.
