A quick and easy recipe for banana muffins, using just one bowl. The use of Demerara sugar makes for an almost caramel like flavour, while the use of coconut oil helps make these muffins even softer and lighter than regular muffins. As for the Nutella.. what can I say, banana and Nutella are always a winner 😉 Definitely a recipe that you’ll want to save and keep safe 🙂
1 Bowl Banana & Nutella Muffins
Makes 1 Doz Large Muffins
4 medium sized ripe bananas
1/4 cup coconut oil
21/2 tsp vanilla essence
1/2 cup white sugar
1/2 cup Demerara or brown sugar
1 large egg
2 cups flour
1 tsp baking powder
1 tsp bicarbonate of soda
Add all the ingredients besides the flour, BP and bicarb to a bowl.
Beat to combine for about 2-3 minutes.
Sift in the dry ingredients and beat till just combined.
Spoon into muffin cups.
Top with 1/2 tsp Nutella and swirl with a knife.
Bake at 180 deg C for 15-20 minutes or till an inserted skewer comes out clean.
Cool and enjoy.
